Vegetable Hollandaise Sauce

A rich, buttery hollandaise sauce infused with lemon, onion, and celery, perfect for drizzling over vegetables or eggs. Elegant and flavorful, it complements a variety of dishes.

Ingredients

  • 1/2 cup butter
  • 1/2 cup boiling water
  • 3/8 teaspoon salt
  • 1 teaspoon minced celery
  • 4 well beaten egg yolks
  • 1 1/2 tablespoon lemon juice
  • 6 drops onion juice

Instructions

  1. Melt butter in a double boiler.
  2. Gradually add the beaten egg yolks to the melted butter, stirring constantly.
  3. Return the mixture to the double boiler and stir constantly over boiling water until thickened.
  4. Remove from hot water and add lemon juice and salt, stirring well.
  5. Cover and place again over hot water.
  6. Add onion juice and minced celery to the sauce.
  7. Remove from heat and keep over hot water until ready to serve.
  8. Serve over vegetables or desired dishes.
