- Melt butter in a double boiler.
- Gradually add the beaten egg yolks to the melted butter, stirring constantly.
- Return the mixture to the double boiler and stir constantly over boiling water until thickened.
- Remove from hot water and add lemon juice and salt, stirring well.
- Cover and place again over hot water.
- Add onion juice and minced celery to the sauce.
- Remove from heat and keep over hot water until ready to serve.
- Serve over vegetables or desired dishes.
