Fiber Rich Muffins
Ingredients
- 1 cup multi-grain hot cereal ⓘ
- 1 cup unbleached white flour ⓘ
- 1 tablespoon baking powder ⓘ
- 1/2 teaspoon baking soda ⓘ
- 1/2 teaspoon salt ⓘ
- 1/2 cup sugar ⓘ
- 1 cup carrot, shredded ⓘ
- 1 cup apple, peeled & chopped ⓘ
- 1/2 cup milk ⓘ
- 2 eggs or 4 egg whites ⓘ
- 1/4 cup vegetable oil ⓘ
- 1 teaspoon vanilla ⓘ
- 1/2 cup pecans, chopped ⓘ
Instructions
- Preheat oven to 400*F.
- Line 12 muffin cups with paper liners or grease muffin cups.
- Blend together dry ingredients. Add remaining ingredients and mix until blended.
- Batter will be thick; spoon into muffin cups. Bake 20-22 minutes or until golden brown.
