Fiesta Baked Cheese Spread

Ingredients

  • 2 (8 oz.) packages Philadelphia cream cheese, softened
  • 1 (8 oz.) package four cheese Mexican style shredded cheese
  • 1 (4 oz.) can chopped green chilies
  • 1 1/4 cups sour cream, divided
  • 1/4 to 1/2 teaspoon ground red pepper

Instructions

  1. Beat the cream cheese in a large mixing bowl with an electric mixer on medium speed until softened.
  2. Reserve 1/4 cup of shredded cheese for garnish.
  3. Mix the remaining shredded cheese, chopped green chilies, 1/2 cup of sour cream, and ground red pepper into the softened cream cheese.
  4. Spoon the mixture into a 10-inch pie plate or quiche dish.
  5. Bake at 350°F (175°C) for 20 minutes or until lightly browned around the edges.
  6. Spread the remaining 3/4 cup of sour cream over the baked cheese spread.
  7. Sprinkle with the reserved 1/4 cup of shredded cheese.
  8. Garnish with bell pepper cut-outs.
  9. Serve with tortilla chips.
