Fiesta Chicken Rotini

Ingredients

  • 13 14 ounces whole wheat rotini
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 medium onion, chopped
  • 1 large zucchini, diced
  • 13 cup pepperonchini bell pepper, chopped
  • 2 tablespoons chili powder
  • 14 12 ounces diced tomatoes with diced chilies, undrained
  • 12 cup pitted black olives, chopped
  • 12 lb chicken breast, diced

Instructions

  1. Cook rotini according to directions.
  2. Meanwhile, in a large skillet, heat oil over medium heat.
  3. Saute garlic, onions, and chicken until chicken is done.
  4. Add zucchini and peppers, cook 5 minutes or until vegetables are tender-crisp, stirring occasionally.
  5. Add the chili powder, tomatoes, and olives, and bring to a boil.
  6. Reduce heat to low.
  7. Simmer uncovered 10 minutes, sturring frequently.
  8. Add rotini and mix well.
  9. Serve immediately.
