Fiesta Chicken Rotini
Ingredients
- 13 14 ounces whole wheat rotini ⓘ
- 3 tablespoons olive oil
- 4 garlic cloves, minced ⓘ
- 1 medium onion, chopped ⓘ
- 1 large zucchini, diced
- 13 cup pepperonchini bell pepper, chopped ⓘ
- 2 tablespoons chili powder
- 14 12 ounces diced tomatoes with diced chilies, undrained ⓘ
- 12 cup pitted black olives, chopped ⓘ
- 12 lb chicken breast, diced ⓘ
Instructions
- Cook rotini according to directions.
- Meanwhile, in a large skillet, heat oil over medium heat.
- Saute garlic, onions, and chicken until chicken is done.
- Add zucchini and peppers, cook 5 minutes or until vegetables are tender-crisp, stirring occasionally.
- Add the chili powder, tomatoes, and olives, and bring to a boil.
- Reduce heat to low.
- Simmer uncovered 10 minutes, sturring frequently.
- Add rotini and mix well.
- Serve immediately.
