Ingredients

  • 1 cup beer
  • 1/2 cup butter or margarine
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 4 eggs
  • 2 tablespoons Parmesan cheese (optional)
  • filling of your choice (egg, ham, tuna, chicken salad)

Instructions

  1. In a saucepan, bring beer to a boil.
  2. Reduce heat to low.
  3. Add butter and stir until melted.
  4. Stir in flour and salt all at once with a wooden spoon.
  5. Cook, stirring constantly, until mixture forms into a ball and leaves the sides of the pan.
  6. Remove from heat.
  7. Add eggs, one at a time, beating well after each addition until smooth.
  8. Stir in Parmesan cheese, if using.
  9. Drop by teaspoonfuls onto a buttered baking sheet, swirling the top of each.
  10. Bake at 450°F for 10 minutes.
  11. Reduce oven temperature to 350°F.
  12. Bake for an additional 10 minutes or until lightly browned.
  13. Cool on racks.
  14. Split the puffs and fill with your preferred filling such as egg, ham, tuna, or chicken salad.
