Ingredients

  • 1 quart water
  • 1/2 cup non-iodized salt
  • 1/2 cup sugar (1/4 brown, 1/4 white)
  • 1 bay leaf

Instructions

  1. Soak the fish in the brine overnight.
  2. Cover the fish completely with the brine mixture.
  3. Wash off the salt from the fish, air dry, and then smoke.
