Ingredients

  • 4 c. flour
  • 1 egg, beaten
  • 3/4 c. milk
  • 1/4 c. butter
  • 1 tsp. salt

Instructions

  1. Sift flour into a mixing bowl.
  2. Hollow out the center of the flour and work the shortening into the flour in the hollow.
  3. Mix together the beaten egg, salt, and milk, then pour into the hollow.
  4. Work in the flour from the edges until a stiff dough is formed.
  5. Roll out the dough on a floured surface until very thin.
  6. Cut the dough into 1-inch strips, then stretch and pull each piece about 1 1/2 to 2 inches long.
  7. Drop the stretched pieces into boiling broth.
  8. Keep boiling until the dumplings are tender.
