Floating Fruit Parfaits

Ingredients

  • 1/2 cup sliced strawberries
  • 3/4 cup boiling water
  • 1 package Jell-O gelatin (strawberry or flavor of choice)
  • 1/2 cup cold water
  • 3/4 cup ice cubes

Instructions

  1. Divide sliced strawberries among 6 parfait glasses.
  2. Stir boiling water into gelatin until dissolved.
  3. Stir in cold water and ice cubes until ice melts.
  4. Pour 3/4 cup gelatin over strawberries in each glass.
  5. Refrigerate for 20 minutes, until set but not firm.
  6. Stir remaining gelatin with 1 cup whipped topping until smooth.
  7. Spoon the whipped topping mixture over the gelatin in each glass.
  8. Refrigerate for 1 hour.
  9. Garnish with remaining whipped topping before serving.
