Ingredients

  • 2 1/2 lb. fresh peas
  • 1 (20 oz.) bag frozen peas
  • 1/4 cup mayonnaise
  • 1 tablespoon chopped parsley
  • 1 tablespoon tarragon vinegar
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 bunch radishes

Instructions

  1. Shell fresh peas if using, to yield about 3 cups.
  2. In a 3-quart saucepan, bring 3/4 cup water to a boil over high heat.
  3. Add peas to the boiling water and cook until tender, about 3 to 5 minutes.
  4. Drain peas and rinse under cold water to cool.
  5. In a bowl, combine mayonnaise, chopped parsley, tarragon vinegar, salt, and pepper to make the dressing.
  6. Wash and slice radishes thinly.
  7. Arrange lettuce leaves on a serving platter.
  8. Toss cooled peas with radishes and dressing.
  9. Serve chilled or at room temperature garnished with additional parsley if desired.
