Ingredients

  • 1 lb. flounder fillets
  • 1/2 tsp. salt
  • dash of pepper
  • 2 tomatoes, peeled and sliced
  • 1/4 cup dry white wine
  • 1/2 tsp. dried basil, crushed
  • 1/2 cup shredded sharp American cheese

Instructions

  1. Place the flounder fillets in a greased 11 x 7 x 1 1/2-inch baking dish.
  2. Sprinkle with 1/2 teaspoon salt and dash of pepper.
  3. Arrange peeled and sliced tomatoes on top of the fillets.
  4. Sprinkle the tomatoes with salt.
  5. Carefully pour 1/4 cup dry white wine over all the ingredients.
  6. Sprinkle with crushed dried basil.
  7. Bake at 350°F for 20 minutes.
  8. Sprinkle with shredded sharp American cheese.
  9. Bake for an additional 5 to 10 minutes or until the fish flakes with a fork.
