Flounder Paprika

Ingredients

  • 2 pounds Flounder
  • 1 16 ounce bag of Egg Noodles
  • 1 Spanish or Yellow Onion
  • 1 pound fresh Mushrooms Parsley
  • 1 pintSour Cream
  • Salt and Pepper, to taste
  • 2 Tablespoons Paprika

Instructions

  1. Boil the egg noodles and place them on serving platter, covered, keeping them warm until fish is ready.
  2. Saute onions, mushrooms and paprika, being careful not to burn the paprika. When onions are translucent, remove half the mixture and set aside.
  3. Turn heat down and lay flounder fillets on top of onion mixture
  4. Cover and cook slowly until the flounder is cooked.
  5. Place flounder fillets over the noodles, keeping warm
  6. Return remaining onion mixture to skill. Add sour cream, salt and pepper.
  7. Simmer until the sauce is thoroughly blended, add more paprika, if necessary.
  8. Pour sauce over the fish and noodles.
  9. Garnish with chopped parsley
