Ingredients

  • 1 cup whole wheat pastry flour
  • 1 cup finely ground cornmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup creamed corn
  • 1/2 cup butter, melted
  • 1/2 cup milk
  • 1/2 cup heavy cream or half and half
  • 2 eggs

Instructions

  1. Preheat the oven to 375.
  2. Combine dry ingredients together, then add eggs, corn, heavy cream, butter and milk, stirring until smooth. Pour in an 8 x 8 square pan and bake for 20-25 minutes.
