Ingredients

  • 1/2 cup butter
  • 1 egg yolk
  • 2 cups sifted confectioners sugar
  • 1 teaspoon vanilla
  • 2 stiffly beaten egg whites

Instructions

  1. Cream the butter until smooth and fluffy.
  2. Stir in the egg yolk and gradually beat in the sifted confectioners sugar until the mixture is fluffy and light.
  3. Add vanilla extract to the mixture.
  4. Gently fold in the stiffly beaten egg whites until well combined.
  5. Vary the flavor by adding lemon or orange juice and grated peel, or incorporate 1 tablespoon of rum or brandy.
  6. Refrigerate until ready to serve.
