Ingredients

  • 1 (4-serving size) package lemon flavored pudding/pie filling
  • 1 cup sugar
  • 1 1/2 cups water
  • 2 egg yolks
  • green food coloring
  • 3 tablespoons lime juice
  • 3/4 teaspoon grated lime rind
  • 1/4 cup sugar

Instructions

  1. Combine the lemon flavored pudding/pie filling mix, 1 cup of sugar, and 1/4 cup of water in a saucepan.
  2. Blend in egg yolks; add the remaining water.
  3. Cook and stir over medium heat until the mixture comes to a full boil.
  4. Remove from heat; stir in lime juice and lime rind.
  5. Beat egg whites until foamy throughout.
  6. Gradually add 1/4 cup of sugar and continue beating until stiff, shiny peaks form.
  7. Fold the meringue into the pie filling mixture.
  8. Add enough green food coloring to tint light green.
  9. Pour onto prepared crust.
  10. Chill until firm.
  11. Garnish with whipped topping, lime slices, or twists before serving.
