  • 1 egg yolk

  • 2 c. milk
  • 1 egg white

Instructions

  2. Beat egg white until foamy; gradually beat in 2 tablespoons sugar, beating to soft peaks.
  3. Gently fold the beaten egg white into the tapioca mixture.
  4. Cook over low heat, stirring constantly until thickened.
  5. Serve warm or chilled.
