Ingredients

  • 2 c. plain flour
  • 1 c. butter, cut up
  • 1 c. chopped pecans
  • 1/2 c. confectioners sugar
  • 1/8 tsp. salt
  • 1 tsp. vanilla
  • 1/4 tsp. almond

Instructions

  1. In food processor, combine flour, butter, pecans, 1/2 cup sugar, salt, vanilla and almond.
  2. Process well.
  3. Refrigerate, covered, for 1 hour.
  4. Preheat oven to 350°.
  5. Shape dough into balls, using 1 tablespoon each.
  6. Place 2 inches apart on ungreased cookie sheet.
  7. Bake for 12 to 15 minutes, until set but not brown. Let stand 1 minute.
  8. Place hot cookies in the 2 cups sugar; roll to coat each cookie.
  9. Cool completely; roll again.
  10. Keep in airtight container.
