Ingredients

  • 1 cup mashed potatoes
  • 1 quart potato water
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1 cake yeast
  • 2 tablespoons lard
  • 2 tablespoons salt

Instructions

  1. Pour hot potato water over flour and sugar.
  2. Add mashed potatoes and allow to cool.
  3. Add yeast to the mixture.
  4. Make a sponge by combining the ingredients.
  5. Beat the mixture for 5 minutes, then let it rise.
  6. Add lard and salt to the risen sponge.
  7. Stiffen up the dough and knead for at least 20 minutes.
  8. Let the dough rise and then knead it down.
  9. Let it rise again.
  10. Shape into loaves or light cakes.
  11. Let the shaped dough rise again.
  12. Bake until golden and cooked through.
