Ingredients

  • 7 cups sliced zucchini or mixture of zucchini and yellow summer squash
  • 1 cup green mango, chopped or sliced
  • 1 cup onion, chopped or sliced
  • 2 cups sugar
  • 1 cup white vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery salt

Instructions

  1. In a large bowl, mix sliced zucchini, chopped mango, and chopped onion.
  2. In another bowl, combine sugar, white vinegar, salt, and celery salt.
  3. Pour the vinegar mixture over the zucchini mixture and stir well.
  4. Store in the refrigerator for 4 to 5 days, stirring once daily.
  5. After that, transfer the mixture into containers and freeze.
