Fresh Broccoli Chowder

Ingredients

  • 2 (10 3/4 oz.) cans chicken broth
  • 1 bunch fresh broccoli, chopped (about 4 c.)
  • 3 c. milk
  • 1 c. light cream
  • 2 c. shredded Swiss cheese
  • 1 c. chopped, cooked ham
  • 1/4 c. butter or margarine

Instructions

  1. Pour chicken broth into large saucepan.
  2. Add broccoli.
  3. Bring to boil; cover and cook 10 to 15 minutes or until tender.
  4. Add milk, cream, Swiss cheese, ham, butter or margarine and salt. Cover and simmer for 15 minutes.
  5. Serve warm.
  6. Makes 2 1/2 quarts.
