Fresh Pickled Melons

Ingredients

  • 1/4 cup white wine
  • 1/4 cup vinegar
  • 2 tablespoons sugar
  • 1 teaspoon each fresh dill, tarragon, and mint, finely chopped
  • 2 cups assorted melons, cut into 1-inch squares

Instructions

  1. In a large bowl, mix wine and vinegar.
  2. Add sugar and herbs, mix until sugar is dissolved.
  3. Add melons, then chill at least 3 hours before serving.
