Ingredients

  • 3 medium cucumbers, unpeeled
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 Tbsp. salt
  • 2 tsp. mustard seed
  • 1/2 c. white vinegar

Instructions

  1. Wash cucumbers and slice very thin (1/16-inch).
  2. Place in stainless steel or glass container with finely chopped onion and green pepper.
  3. Toss with salt and mustard seed and let stand for 1 hour.
  4. Drain off as much juice as possible, without losing mustard seed.
