- Wash tomatoes; remove cores and cut into quarters.
- Put the tomatoes, minced onion, basil leaves, crushed peppercorns, and salt in a stainless steel kettle.
- Simmer over low heat, stirring often and mashing tomatoes to soften into a juicy mush.
- Pass the mixture through a food mill.
- If a thinner juice is desired, strain the milled puree through a fine strainer.
- Add more salt to taste.
- Chill before serving.
