Bright and refreshing, this fresh tomato juice combines ripe tomatoes with aromatic basil and onion, perfect for summer refreshment or healthy brunch beverages.

Ingredients

  • 4 lb. fully ripe tomatoes
  • 1 Tbsp. minced onion
  • 3 fresh basil leaves
  • 2 peppercorns, crushed
  • 1 tsp. salt
  • lemon slices or tiny leafy celery ribs
  • celery salt

Instructions

  1. Wash tomatoes; remove cores and cut into quarters.
  2. Put the tomatoes, minced onion, basil leaves, crushed peppercorns, and salt in a stainless steel kettle.
  3. Simmer over low heat, stirring often and mashing tomatoes to soften into a juicy mush.
  4. Pass the mixture through a food mill.
  5. If a thinner juice is desired, strain the milled puree through a fine strainer.
  6. Add more salt to taste.
  7. Chill before serving.
