Fried Ricotta

Ingredients

  • 1 lb. macaroons
  • 2 lb. Ricotta cheese
  • pinch of cinnamon
  • 6 eggs
  • breadcrumbs
  • 1/2 lb. butter
  • powdered sugar
  • brandy

Instructions

  1. Reduce macaroons to fine crumbs and blend until smooth with Ricotta, cinnamon and 4 eggs.
  2. Roll into walnut size balls.
  3. Dip them in beaten eggs and roll in breadcrumbs.
  4. Brown in butter; sprinkle with sugar and brandy and flame to serve.
  5. Delicious and beautiful.
