- Reduce macaroons to fine crumbs and blend until smooth with Ricotta, cinnamon and 4 eggs.
- Roll into walnut size balls.
- Dip them in beaten eggs and roll in breadcrumbs.
- Brown in butter; sprinkle with sugar and brandy and flame to serve.
- Delicious and beautiful.
