Fried Softshell Crawfish

Ingredients

  • soft shelled crawfish
  • eggs
  • salt and pepper
  • flour
  • cornmeal
  • cayenne pepper
  • garlic powder
  • allspice
  • cooking oil

Instructions

  1. Clean the crawfish by removing the top shell and eyes. Combine eggs, salt and pepper.
  2. Pour over the crawfish.
  3. Mix flour and cornmeal in 3 to 1 proportion; season with salt, cayenne pepper, garlic powder and allspice.
  4. Dip crawfish into this mixture and fry in oil for about 3 minutes.
