Fried Softshell Crawfish

- Clean the crawfish by removing the top shell and eyes. Combine eggs, salt and pepper.
- Pour over the crawfish.
- Mix flour and cornmeal in 3 to 1 proportion; season with salt, cayenne pepper, garlic powder and allspice.
- Dip crawfish into this mixture and fry in oil for about 3 minutes.
