Ingredients

  • 2 young squirrels
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3/4 cup flour
  • 1/2 cup shortening

Instructions

  1. Cut squirrels into serving pieces and coat in a mixture of flour, salt, and pepper.
  2. Fry the coated squirrel pieces in shortening until browned and cooked through.
  3. Remove the squirrel from the pan and add 2 tablespoons of the flour mixture to the pan drippings.
  4. Stir until the flour mixture is absorbed and browned.
  5. Add 1 cup of water to the pan to make gravy, stirring to combine.
  6. Return the squirrel to the gravy and simmer until the meat is tender, about 30 minutes.
