Fried Vegetable Batter

Ingredients

  • 3/4 c. cornstarch
  • 1/4 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. water
  • 1 egg, slightly beaten

Instructions

  1. Stir the first 5 ingredients together.
  2. Pour 1 quart of corn oil in a large skillet to 1/2 inch.
  3. Don't fill over 1/3 full.
  4. Dip 4 cups cut up vegetables or chicken (cut small, boneless, skinless), a few at a time, into batter.
  5. Stir now and then.
  6. Fry 2 or 3 minutes, turning once.
