Ingredients

  • 4 medium yams
  • 4 c. water
  • a dash of salt
  • 4 Tbsp. butter or margarine
  • 2 Tbsp. sugar

Instructions

  1. Soak sliced yams in water with salt for 30 minutes.
  2. Remove from water; drain and pat dry.
  3. Melt butter in a large, heavy skillet until bubbly.
  4. Add yams and brown quickly on both sides. Sprinkle with sugar.
  5. Stir gently to coat both sides.
  6. Cover; reduce heat to low.
  7. Simmer for 15 to 20 minutes or until tender.
