- Melt butter in an 8‑inch iron skillet over medium heat.
- Add potatoes and cook until lightly browned, stirring occasionally, about 5 to 7 minutes.
- In a small bowl, beat together eggs, water, and salt and pour over potatoes.
- Cover and cook over low heat until eggs are almost set, about 4 to 5 minutes.
- Sprinkle with shredded cheese.
- Place under broiler about 6 inches from heat until eggs are completely set and cheese is melted, about 2 to 3 minutes.
- Cut into serving pieces.
