- Beat the egg white until frothy.
- Add 1 tablespoon of water to the egg white and mix well.
- Add pecans to the egg white mixture and coat evenly.
- In a separate bowl, mix sugar and cinnamon.
- Add the sugar-cinnamon mixture to the pecan mixture and stir until coated.
- Spread the coated pecans on a cookie sheet.
- Bake for 1 hour at 200°F, stirring occasionally if desired.
- Remove from oven and let cool slightly.
- Put cooled pecans in a paper bag and break into pieces.
