Ingredients

  • 1 (1 lb. 4 oz.) can pineapple tidbits, drained
  • 1 cup flaked or shredded coconut
  • 1 pint lemon sherbet
  • 1 cup blueberries (optional)

Instructions

  1. Place chilled pineapple in 6 dessert dishes.
  2. Sprinkle 3/4 cup coconut over the pineapple.
  3. Top each with lemon sherbet.
  4. Scatter remaining coconut on top.
  5. Garnish with blueberries if desired.
