Ingredients

  • 2 (10-inch) pie crusts
  • 7 oz coconut
  • 1 cup chopped pecans
  • 1/2 stick butter
  • 1 (8 oz) cream cheese
  • 1 (16 oz) Cool Whip

Instructions

  1. Mix the cream cheese and Cool Whip until soft and creamy with a mixer.
  2. Pour half of the mixture into each pie crust.
  3. Sprinkle coconut over the Cool Whip mixture.
  4. Drizzle half of the caramel topping over the coconut layer.
  5. Layer the remaining mixture, coconut, and caramel topping again.
  6. Finish with a layer of caramel topping.
  7. Wrap well and freeze overnight.
  8. Keeps well for 3 months in the freezer.
