Frozen Cukes are a tangy, sweet cucumber and onion preserve perfect for summer snacks or side dishes, offering a refreshing flavor with a crunchy texture after freezing.

Ingredients

  • 2 qt. cucumbers, sliced
  • 1 large onion, sliced
  • 2 Tbsp. pickling salt
  • 1 1/2 c. sugar
  • 1/2 c. vinegar

Instructions

  1. Combine cucumbers, onions, and salt in a bowl.
  2. Refrigerate for 24 hours.
  3. Wash and drain the mixture.
  4. Add sugar and vinegar to the drained vegetables.
  5. Return to refrigerator for another 24 hours.
  6. Spoon the mixture into containers.
  7. Cover with juice and freeze.
