- Take a firm onion and slice thick slices; separate into rings. Blanch a few rings at a time in boiling water for 15 seconds.
- Cool quickly in ice water; drain.
- Separate the rings.
- Roll the rings in flour, dip in milk, then coat with a mixture of half pancake mix and half cornmeal.
- Freeze the coated rings on a cookie sheet and pack in single layers.
- Take out as many as you like at a time.
- While still frozen, fry in fat until lightly browned.
