Crispy frozen onion rings with a flavorful coating made from pancake mix and cornmeal, perfect as a snack or appetizer for casual gatherings and family meals.

Ingredients

  • flour
  • onion
  • milk
  • half pancake mix and half cornmeal

Instructions

  1. Take a firm onion and slice thick slices; separate into rings. Blanch a few rings at a time in boiling water for 15 seconds.
  2. Cool quickly in ice water; drain.
  3. Separate the rings.
  4. Roll the rings in flour, dip in milk, then coat with a mixture of half pancake mix and half cornmeal.
  5. Freeze the coated rings on a cookie sheet and pack in single layers.
  6. Take out as many as you like at a time.
  7. While still frozen, fry in fat until lightly browned.
