Ingredients

  • 1 pkg. cut-up chicken (about 8 pieces)
  • salt and pepper
  • 3 Tbsp. butter or margarine
  • 1 (6 oz.) can pineapple-orange juice concentrate
  • 1/3 c. dry sherry
  • 1 tsp. cornstarch
  • 1 Tbsp. water
  • hot buttered rice

Instructions

  1. Preheat oven to 375°F.
  2. Sprinkle chicken pieces with salt and pepper, then brush with melted butter.
  3. Place chicken in a shallow baking pan and bake for 30 minutes.
  4. Turn the chicken pieces over.
  5. Combine pineapple-orange juice concentrate and sherry; heat to boiling.
  6. Pour the fruit mixture over the chicken and bake for an additional 30 minutes, basting frequently.
  7. When chicken is tender and glazed, remove to a hot serving dish.
  8. Blend cornstarch with cold water; stir into the pan liquid.
  9. Cook and stir until slightly thickened.
  10. Spoon the sauce over the chicken and serve with hot buttered rice.
