Fruit Salad Squares

Ingredients

  • 1 large can crushed pineapple
  • 1 small can mandarin oranges
  • 1 c. syrup
  • 1/2 c. sugar
  • 3 Tbsp. cornstarch
  • 1 envelope unflavored gelatin
  • 1/4 tsp. salt
  • 1/2 c. orange juice
  • 1/4 c. lemon juice
  • 1 egg
  • 2 c. mini marshmallows
  • 1/2 c. nuts
  • 2 c. whipped topping

Instructions

  1. Drain fruits and reserve 1 cup syrup.
  2. Combine syrup in saucepan with sugar, cornstarch, gelatin, salt and orange and lemon juices.
  3. Cook until thickened and boil for 2 minutes.
  4. Add a small amount of this to beaten egg.
  5. Return to hot mixture and cook 1 minute longer.
  6. Cool to room temperature and fold in the fruits, marshmallows, nuts and topping.
  7. Use a 9 x 9-inch dish. Cool.
  8. Garnish with maraschino cherries.
  9. Cut in squares.
