Ingredients

  • 2 c. milk
  • 1 pkg. vanilla pudding mix
  • 2 Tbsp. sugar
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/2 c. currants
  • 1/3 c. pineapple
  • 2 c. cooked rice

Instructions

  1. Heat milk to boiling over moderate heat.
  2. Quickly stir in vanilla pudding mix and bring to a boil. Remove from heat.
  3. Dissolve cinnamon in a small amount of vanilla and stir into the mixture.
  4. Add sugar, currants, pineapple, or preserves, and stir well.
  5. Stir in cooked rice and blend thoroughly.
  6. Chill the mixture before serving.
  7. Top with whipped cream before serving.
