Ingredients

  • 1/4 lb tofu, drained
  • 1 medium banana
  • 1/2 cup pineapple, fresh cut

Instructions

  1. Combine tofu, banana, and pineapple in a blender or food processor and process until smooth to make the sauce.
  2. Place the remaining fruit in a bowl and toss with the tofu sauce.
  3. Serve in sherbet or parfait cups garnished with a piece of fruit and mint leaves.
