Fruity Fruit Cake

Ingredients

  • 3/4 c. flour
  • 3/4 c. sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. vanilla or rum
  • 2 c. pecans
  • 1 lb. dates
  • 1 c. maraschino cherries
  • 3 eggs

Instructions

  1. Grease a 9 x 5 x 3-inch pan and line with wax paper.
  2. Mix fruit and nuts together by hand.
  3. Sift dry ingredients and mix with fruit.
  4. Beat eggs with vanilla or rum flavoring; stir into other mixture.
  5. Bake at 300° for 1 hour and 10 minutes.
  6. Cool on rack in pan for 15 minutes.
  7. Remove.
  8. Cool again.
  9. Wrap in foil.
