Garbage Can Spaghetti Sauce

Ingredients

  • 500 g ground beef, buffalo, or moose
  • 1 onion, chopped
  • 3 or 4 garlic cloves, minced
  • Whatever veggies you need to get rid of in the fridge (green peppers, celery, carrots, zucchini, etc..), chopped
  • 1 14-oz. can tomatoes or 3 or 4 chopped fresh ones
  • 1 can tomato sauce
  • 1 can tomato paste
  • 2 tbsp basil (or 1/4 c. fresh basil)
  • 2 tbsp oregano
  • 1 to 2 tbsp chili powder
  • 1/4 to 1/2 tsp cayenne powder
  • 1/4 tsp cloves
  • 1/4 tsp cinnamon
  • 1 tbsp cocoa
  • 1 bay leaf

Instructions

  1. saute ground meat until brown.
  2. add veggies and saute until onions are translucent and other veggies are softened (but not mushy)
  3. Add tomatoes, tomato sauce and tomato paste. Stir until mixed and heated through.
  4. Add all spices and simmer for 20 minutes, adjusting spice balance as desired.
