Ingredients

  • 2 cups broccoli flowerets
  • 1 cup cauliflower flowerets
  • 2 tablespoons water
  • 1 medium zucchini, sliced 1/4-inch thick
  • 1 1/2 cups fresh mushrooms
  • 1 red or green pepper, cut into thin strips
  • Garlic Butter

Instructions

  1. Arrange broccoli and cauliflower around the outer edge of a large microwave-safe platter.
  2. Sprinkle with water over the vegetables.
  3. Cover with microwave-safe clear plastic wrap, venting by leaving a small area unsealed at the edge.
  4. Microwave on 100% power (High) for 2 minutes.
  5. Place sliced zucchini, mushrooms, and pepper strips in the center of the platter.
  6. Cover and microwave on High for 4 to 5 minutes, or until vegetables are crisp-tender.
  7. Carefully drain off excess liquid.
  8. Drizzle with garlic butter before serving.
