Ingredients

  • 1 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp. dried basil
  • 1 lb. firm tomatoes, cored and cut into chunks
  • minced fresh chives
  • freshly grated Asiago or Romano cheese

Instructions

  1. In a large skillet, heat olive oil over low heat.
  2. Add minced garlic, dried basil, and chopped tomatoes to the skillet.
  3. Sauté over low-medium heat until the tomatoes are just wilted, about 2 1/2 minutes.
  4. Add freshly grated Asiago or Romano cheese and minced fresh chives, then serve hot.
