Three Tomato Tart

- Prepare pastry for a single crust pie and place it in a 10-inch tart pan. Trim the pastry even with the rim of the pan.
- Line the pastry shell with a double thickness of foil.
- Bake at 450°F for 5 minutes.
- Remove the foil and bake for an additional 7 minutes or until the pastry is done.
- Remove from oven and reduce temperature to 325°F.
- Mix grated Parmesan cheese, egg whites, ricotta cheese, minced garlic, and thyme to prepare the filling.
- Spread the filling evenly over the baked pastry.
- Arrange sliced tomatoes on top of the filling.
- Bake the assembled tart at 325°F until heated through and slightly golden, about 30-35 minutes.
- Let cool slightly before serving.
