Ingredients

  • pastry for a single crust pie
  • 3 Tbsp grated Parmesan cheese
  • 2 egg whites
  • 1 cup low-fat Ricotta cheese
  • 2 garlic cloves minced
  • 1 Tbsp thyme
  • 2 large tomatoes sliced
  • 5 yellow or cherry tomatoes sliced
  • 2 red cherry tomatoes sliced

Instructions

  1. Prepare pastry for a single crust pie and place it in a 10-inch tart pan. Trim the pastry even with the rim of the pan.
  2. Line the pastry shell with a double thickness of foil.
  3. Bake at 450°F for 5 minutes.
  4. Remove the foil and bake for an additional 7 minutes or until the pastry is done.
  5. Remove from oven and reduce temperature to 325°F.
  6. Mix grated Parmesan cheese, egg whites, ricotta cheese, minced garlic, and thyme to prepare the filling.
  7. Spread the filling evenly over the baked pastry.
  8. Arrange sliced tomatoes on top of the filling.
  9. Bake the assembled tart at 325°F until heated through and slightly golden, about 30-35 minutes.
  10. Let cool slightly before serving.
