- Remove 1/2 inch from the bottom of broccoli stems.
- Cut broccoli crosswise into 1-inch pieces, about 14 loosely packed cups.
- Heat olive oil in a large deep nonstick skillet over medium heat.
- Stir in minced garlic and cook until aroma is released, about 30 seconds to 1 minute, stirring once or twice.
- Be careful not to let the garlic color.
- Stir in salt and add the broccoli pieces.
- Cover and cook for 6 to 7 minutes, stirring occasionally, until leaves are just wilted and stems are crisp-tender.
- Cook for an additional 2 minutes until water is almost evaporated.
