Ingredients

  • 1 Cornish hen
  • 1/4 cup minced onion
  • 1 tablespoon shortening or oil
  • 1 package herb stuffing
  • 1/4 cup chopped celery
  • 1 cup water or broth

Instructions

  1. Place the fat (shortening or oil) in the skillet.
  2. Fry onion and celery until tender.
  3. Add water or broth to the skillet.
  4. Mix in the herb stuffing until moist but not soggy.
  5. Stuff the cavity of each Cornish hen with the stuffing mixture.
  6. Place the stuffed hen in a baking bag or wrap in aluminum foil.
  7. Bake at 350°F for 45 minutes.
  8. Uncover and brown lightly.
  9. Serve immediately.
