Ingredients

  • 20 Ritz crackers
  • 3/4 cup chopped pecans
  • 3 egg whites
  • 1 cup sugar
  • 1 teaspoon vanilla
  • whipped topping

Instructions

  1. Crush the Ritz crackers and mix in 1/2 cup sugar and chopped pecans.
  2. Beat the egg whites until stiff peaks form, then add the remaining 1/2 cup sugar and vanilla.
  3. Fold the beaten egg mixture into the cracker mixture.
  4. Pour the batter into a buttered pie pan and bake at 300°F for 30 to 35 minutes.
  5. Let the pie cool, then spread whipped topping over the top and refrigerate until set.
