Gator Chorizo(Sausage)
Ingredients
- 1 lb. ground gator ⓘ
- 1 lb. ground pork, unseasoned ⓘ
- 3 cloves garlic, crushed with 1 tsp. salt ⓘ
- 1/2 tsp. oregano, finely crushed ⓘ
- 1 to 3 tsp. chili powder (hot) ⓘ
- 1 tsp. ground coriander
- 1 tsp. ground cumin ⓘ
- 1 1/2 tsp. powdered cayenne ⓘ
- 1 tsp. pepper
- 1 tsp. salt ⓘ
- 1/2 c. vinegar
- 1/2 c. sherry (can substitute another 1/2 c. vinegar) ⓘ
Instructions
- Mix and work all ingredients together, except meats.
- Then mix in meats and work it with your hands to mix thoroughly.
- The vinegar and sherry "cures" the meat and prevents spoilage.
- Cover and refrigerate.
- Let season for at least 3 days before using.
