Ingredients

  • 4 slices bacon
  • 2 handfuls hash brown potatoes
  • 2 slightly beaten eggs
  • pepper to taste

Instructions

  1. Cut bacon into small pieces and cook in an iron skillet over medium heat until done, about 15 minutes.
  2. Make a space in the center of the skillet for the hash browns.
  3. Add the hash brown potatoes to the skillet and cook until crispy.
  4. Beat the eggs and pour over the bacon and hash browns in the skillet.
  5. Turn the mixture once to cook evenly, then cut in half and serve.
