Ingredients

  • 2 eggs
  • 1 1/2 cups milk
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions

  1. Beat the eggs in a bowl.
  2. Add 1 cup of milk and continue beating until well combined.
  3. Sift the flour with the salt and sugar, then add to the mixture.
  4. Add the remaining milk and mix to form a thin batter.
  5. Heat an iron frying pan fairly hot and melt a tablespoon of butter in the bottom.
  6. Pour 2 or 3 tablespoons of batter into the pan and tilt to cover the bottom evenly.
  7. When the top is set, dot with a teaspoon of butter and flip to cook the other side.
  8. Serve with butter and sugar rolled up or with applesauce.
