German Sweet Pickles

Ingredients

  • whole cucumbers
  • salt water (2 c. salt in 1 gal. water, enough to cover cukes)
  • alum water (2 Tbsp. alum to 1 gal. water)
  • water
  • 1 tsp. mace
  • 3 sticks cinnamon, crushed
  • 1 tsp. cloves
  • 5 lb. sugar
  • 5 pt. vinegar

Instructions

  1. Soak whole cucumbers in salt water 7 days.
  2. Take cukes out; wash (peel if desired) and slice.
  3. Soak in alum water for 24 hours.
  4. Be sure cukes are covered.
  5. Take cukes out and wash 3 times in water.
  6. Next, mix remaining ingredients.
  7. (For lighter pickles, tie spices in cheesecloth.)
  8. Bring vinegar, sugar and spices to a boil.
  9. Pour over cukes.
  10. Let set 4 days.
  11. Pack in jars.
  12. Bring pickling solution to a boil; pour over cukes and seal.
