Ingredients

  • 10 lb. pears
  • 8 lb. sugar
  • 4 oz. crystallized ginger
  • 6 lemons

Instructions

  1. Pare fruit and cut into thin slices after removing the core.
  2. Mix pears and sugar together.
  3. Place the mixture over low heat in a large kettle.
  4. Stir until the sugar is melted and a syrup forms.
  5. Simmer until the fruit is clear, stirring occasionally.
  6. Add the grated rind of 2 lemons and the juice of all 6 lemons.
  7. Add the ginger, cut into small pieces, and simmer until thick.
  8. Put the mixture in sterilized jelly glasses; cover with paraffin or seal in sterilized pint jars while hot.
